The beans are is fully fermented, washed, sun dried and hand sorted. The plot where this typica is cultivated is the highest area on this farm and the supply is very limited - Bella Carmona is the first coffee farm Jim visited at the beginning of his career and where Eva fell in love with coffee and, Maria. Elder Maria tended this farm well in to her eighties until she passed, infusing her smile and joy into every plant on this farm. You will smile too when you drink this rare coffee. -

Matcha Izu Matcha green tea powder is one of the most concentrated tea powders in the world and is high in antioxidants and slightly astringent (the slight bitterness at the end are the antioxidants coming thru). We offer a luxury grade Matcha that we use in our cafe – The water temp should be approx. 175 degrees if possible, then froth in small cup for best results. Note: If you're brave, we hear that if you use 2-3 times the amount of tea suggested and steep for 2-3 minutes that this can cut down on the astringency with plenty of active constituents for health.
