    This roast profile was created with Mount Rainier (Ti’Swaq) in mind. Ti’Swaq’ is the name given by the region’s First People in an effort to restore one of its original names used by the local tribes. Its name means “The Sky, the Sky wiper. It touches the Sky.” Its flavor is unusual with hints of cedar and fig with a medium body and a complex nature.     New - Blend of beautifully fermented beans. Light, crisp, and refreshing - with a buzz of wild honey infused with the scent of cypress. An unusually heavy rainy season washed out a mountain hillside, dammed up the river, washed out the roads and Finca's buildings sat upon a cliff. Undaunted by this event, Luz Marina (a third generation Colombian coffee grower) rebuilt the roads, cleared the boulder from the river, and renewed her farm. In the coming days, when the rains ceased and the weather cleared, the hillside would reveal a silhouette of Our Lady of Guadalupe. And, the area below quickly became a sign of hope for the people and a place of pilgrimage. The Forest is slowly reclaiming the hillside now but the image will be remembered for generations. A very special coffee.

    Luz Marina Trujillo, a third-generation Colombian coffee grower, lives on Vashon Island part time. She transported the techniques, mastered by her family in Colombia, to her farm in Costa Rica. On her Costa Rican farm, she grows a combination of intensive shaded coffee intermixed with natural forest to ensure the preservation of water quality, and she set aside land next to her to help preserve the forest. The austere style of Santa Elena Estate Coffee or the 'Queen of the Collection,' is as distinctive, and has a personality as individual as that of its owner. The cup is light, crisp, and refreshing, like the high mountain air of Tarrazu. Softy nutty flavor. Pairs nicely with desserts, especially chocolate. Direct trade.
