Guatemala Reserve – Full Ferment- lightest roast. New crop 2026 This very Rare coffee is a Pure "typica", an original variety and not hybridized. The beans are is fully fermented, washed, sun dried and hand sorted. The plot where this typica is cultivated is the highest area on this farm and the supply is very limited - Bella Carmona is the first coffee farm Jim visited at the beginning of his career and where Eva fell in love with coffee and, Maria. Elder Maria tended this farm well in to her eighties until she passed, infusing her smile and joy into every plant on this farm. You will smile too when you drink this rare coffee. -

She transports the techniques, mastered by her family in Colombia, to her farm in Costa Rica. She grows a combination of intensive shaded coffee intermixed with natural forest to ensure the preservation of water quality and has set aside land next to her farm to ensure preservation of the remaining forest. Nettle Leaf Tea is often used in the spring time to counteract allergies from grasses and trees. Their leaves are collected in the springtime to use fresh in cooking (add to egg dishes or soup) and for drying for later use. Be mindful where you collect and look for "clean" soils to forage from. Matcha Izu Matcha green tea powder is one of the most concentrated tea powders in the world and is high in antioxidants and slightly astringent (the slight bitterness at the end are the antioxidants coming thru).
